PAMELA'S FROZEN LIME PIE

Crust:
8 oz. ground ginger snaps or graham crackers
4 oz melted butter

  1. mix together and press into pie pan & up sides
  2. bake at 350 F for approximately 15 minutes until golden brown.

Filling:

1/4 cup fresh lime juice
2 teaspoons lime zest
1 tin condensed milk
1-2/3 cup whipping cream
  1. Mix together 1/4 cup fresh lime juice and 2 teaspoons lime zest.
  2. Whip together 1 tin condensed milk and 1 2/3 cup whipping cream until stiff
  3. Fold into lime mix, and pour into baked shell.
  4. Garnish with lime zest and freeze till frozen.
  5. Let temper a smidge then serve.
